材料 (2 small loaves (or 1 full-sized loaf))

Biga
All-purpose flour
150g
Dry yeast
1 teaspoon
Sugar (or honey)
1 teaspoon
Water (room-temp)
150cc
Bread
Bread flour
350g
Sugar (or honey)
1 teaspoon
Salt
1 teaspoon
Olive oil
1 tablespoon
Water (room-temp)
250cc
Walnut pieces
80g (or as you wish)
Raisins
80g (or as you wish)

作り方

    ■Make Biga :

    Stir together, warm water, sugar and yeast.

  3. 3

    Transfer yeast mixture to another bowl and add flour.

  4. 4

    Stir well. It will result in a very wet dough.

  5. 5

    Cover bowl with plastic wrap.

  6. 6

    Let stand at cool room temp at least 8 hours.

    Note: Biga will be VERY sticky and full of bubbles.

    ■Make Bread :

    Mix bread flour, sugar, salt and olive oil in large bowl.

    Add walnut pieces and raisins and mix well.

    Add biga and water and blend them until flour is moistened.

    Cover with plastic wrap, until doubled- about 2 hours.

    Note: Dough will be sticky.

    Place a piece of parchment paper on baking sheet.

    Turn dough out onto a well-floured surface and cut in half.

    Form each half into an irregular ovals.

    Brush tops with olive oil.

    Loosely cover with plastic wrap.

    Let rise 1 1/2 to 2 hours, until almost doubled.

    ■How to bake this Bread Recipe :

    Pre-heat the oven to 230°C.

    Make deep diagonal slashes across loaves every 2 inches.

    Spray loaves lightly with water.

    Bake for 20 to 25 minutes or until golden brown.

    Transfer loaves to wire rack and cool to room temperature.
