Italian-style Tomato Hot Pot

Japanese-style hot pots are delicious, but occasionally, you crave for a different seasoned hot pot. The 'risotto' you make with the leftover soup at the end is delicious.

We use a pretty small earthenware pot.
If there's not enough soup, add more water, soup stock granules and ketchup. Modify the ingredients to your preference. For 2 to 3 servings. Recipe by milktime

Ingredients

3 servings
  1. The soup:
  2. 1 can Canned crushed tomatoes
  3. 1 clove Garlic (minced)
  4. 1 Oregano (dried)
  5. 1 tbsp Soup stock granules
  6. 2 tbsp Ketchup
  7. Additional ingredients of your choice:
  8. 1 thigh Chicken thigh meat (cut into bite sized pieces)
  9. 10 Chicken dumplings
  10. 3 Wiener sausages (cut in half)
  11. 1/4 Cabbage (cut into bite sized pieces)
  12. 1/2 Carrot (cut up as you like)
  13. 2 Potatoes (cut into bite-sized pieces)
  14. 1/2 packet Shimeji mushrooms (shred)
  15. 1 as much (to taste) Cherry tomatoes, broccoli, mizuna, etc.
  16. For the risotto to finish: (Or boiled pasta)
  17. 1 as much (to taste) Cooked rice, pizza cheese

Cooking Instructions

    Prep the ingredients. Cut up the vegetables, and parboil the carrot and potatoes.

    Prep the soup. Put 1 tablespoon of olive oil and the finely chopped garlic in the earthenware pot and turn up the heat.

    When the garlic is fragrant, add the canned tomatoes, oregano, 2 cups (400 ml) of water and soup stock granules.

    Add ketchup to season. Taste, and adjust with salt and pepper. The broth should be on the salty side since the vegetables will dilute the soup as they cook.

    Once the soup is ready, enjoy the hot pot at the dinner table. The root vegetables are parboiled, so all you have to do is to make sure the meat is cooked through.

    Add some Tabasco and grated cheese to taste. If the hot pot is for adults, you could add Tabasco to the soup itself.

    When all the meat and vegetables are eaten, make a 'risotto' with the leftover soup. Rinse the cooked rice briefly to remove the stickiness.

    Put the rice in the soup and simmer until the flavors have permeated. Add the pizza cheese. Turn off the heat and put a lid on. When the cheese has melted, it's done.

    Add some parsley and black pepper to taste, and eat the 'risotto' while piping hot. It's flavorful and delicious!

    If you use pasta instead of rice, I recommend boiled penne.
